Recess Uji Blend is crafted from tea grown in Uji, Kyoto — one of the most historic and respected tea-growing regions in Japan.

Uji has been associated with premium matcha production for centuries and is known for teas with deeper sweetness, richer umami, and exceptional smoothness.

This blend incorporates more premium cultivars, which create a more layered and refined flavor profile.

The result is a matcha that feels slightly more luxurious while remaining balanced enough for everyday enjoyment.

Why Matcha Freshness Matters

One of the most important — and often overlooked — aspects of matcha quality is freshness.

Unlike loose-leaf tea, matcha is finely stone-ground into powder. Once the tea leaves are ground, the powder has significantly more surface area exposed to oxygen, light, and moisture.

As a result, matcha gradually loses:

Over time, stale matcha can develop a dull color and a flat or bitter taste.

Bitterness in matcha is usually caused by one of the following factors.

Poor Processing

Improper shading, harvesting, or grinding techniques can produce matcha that tastes harsh or astringent.

Lack of Freshness

Water Temperature

Using boiling water can scorch matcha and amplify bitterness. Traditionally, matcha is prepared with water around 160–175°F (70–80°C).
