Ideal Matcha Temperature
One of the most misunderstood things about matcha is that it doesn’t dissolve in water. Sugar dissolves. Salt dissolves. Even many drink powders dissolve. Matcha doesn’t. Matcha is made from finely stone-ground tea leaves, so when it’s mixed with water, you’re actually creating a suspension of microscopic leaf particles, not dissolving the ingredient into the liquid. That’s why matcha has a slightly different texture than most drinks. Even when prepared perfectly, there’s always a subtle body to it. Sometimes people describe it as creamy, and sometimes they notice a faint texture or grit. That texture simply comes from drinking the whole tea leaf. Temperature affects how those particles behave in water. Hotter water makes powders easier to disperse. The water becomes less viscous, and particles move more freely, which is why higher temperatures can make matcha mix very quickly. In culinary applications or desserts, that extra heat can actually be helpful because the powder incorporates faster and more thoroughly. But heat also changes the flavor. As the temperature rises, compounds in the tea become more pronounced and matcha can taste more bitter or astringent. At the same time, delicate aromatic compounds can fade faster, and the vibrant green color of the tea can gradually shift toward a darker olive tone. Lower temperatures create a different balance. The powder still suspends in water, but the flavor stays softer, and the color remains brighter. Instead of emphasizing bitterness, the matcha tends to show more of its natural sweetness and umami. This is why many modern cafés experiment with slightly lower preparation temperatures. The goal isn’t to dissolve the matcha perfectly—it’s to create a smooth suspension while protecting the flavor and color of the tea. When the temperature is right, the drink feels lighter, brighter, and more balanced. The matcha tastes more like the leaf it came from. Sometimes the best way to improve a drink isn’t by adding more steps or ingredients. It’s simply by turning the temperature down a little.
